Yeast cell wall components from Opti-White™ will be solubilized during fermentation and aging. These polysaccharides will have a very positive impact, bringing more roundness and smoothness to the wines. Their action will enhance the autolysis of yeast.
Dosage: 30-50 g/hl to the juice for smoothness, antioxidative colour protection and aromatic freshness. 20-30 g/hl towards the end of fermentation for smoothness and better integration of wood and alcohol.
