Pure tartar. Is added to lighter coloured wines to carry out a natural cold stabilisation: chilling the wine to < 4 °C and adding a quantity of tartar (4 g/l) 'forces' natural precipitation of the tartar crystals. Reaction time: 4-6 hours, after which the wine needs filtering. Precipitating the tartar crystals in the tank prevents any precipitation of crystals in the bottled wine.
