Cardamom gives a refreshing, menthol smell and a very intense flavour reminiscent of mint, citrus, pepper, clove and allspice. The fruits have a very powerful flavour, so the brewer has to take care not to let them dominate the flavour of the beer. A few grams of freshly ground cardamom added at the end of the boil is usually enough for a 20 litre brew. Cardamom can mainly be found in intense dark beers.
